Chicken Romano Meatloaf
My boyfriend and I are trying to eat healthy and I have finally had a chance to cook for him so I decided to make him something I know he would like. I got it from good housekeeping's September 2006 issue. This meatloaf is healthier than regular meatloaf because it has ground chicken and it's not blah tasting like most healthy stuff. It has a great Italian taste to it and smells delicious when it's in the oven. Plus, it's super easy to make. It only took me maybe 15 minutes to put together and an hour to cook.

1/2 cup grated Romano Cheese
1/2 cup dried bread crumbs
1 large egg
1 cup marinara sauce
2 lbs. ground chicken
Instructions:
Preheat oven to 400 degrees. Line 13" by 9" metal baking pan with foil. Spray foil with non-stick cooking spray.
In large bowl, stir Romano, bread crumbs, egg, 1/2 cup marinara sauce, and 1/2 teaspoon salt. Add chicken and mix until just combined.
Spoon chicken mixture into center of prepared pan; shape into 9"-5" loaf, pressing firmly. Spread remaining marinara over top.
Bake meatloaf 1 hour and 5-10 minutes or until temperature on thermometer reaches 165 degrees. Let stand about 10 minutes for easier slicing.
240 calories, 8 g carbs, 12g total fat per serving.
